Watermelon Salsa Fish Tacos

here is a recipe to send your next fish taco meal into the stratosphere! I prefer grilled walleye backstraps, but it also goes great with fried.

WATERMELON SALSA

  • 4 cups diced Watermelon

  • 1/2 cup diced red onion

  • 1/4 cup chopped fresh cilantro

  • 2 - 3 diced jalapeno (deseeded)

  • Zest and juice from 1 lime

  • Pinch of salt & pepper

*measurements are approximates

Mix diced melon, onion, cilantro, jalapeno, lime zest, salt & pepper and lime juice in a bowl. Adjust to taste as desired. Serve chilleed. Serve with chips or on fresh greens or in fish tacos
